Let's be real, everyone has that meal they make if they are running out of food or if they have a last minute potluck to go to. In my family, we have two recipes for such occasions: pot-pie and chili. Today, I will tell you how to make great chili, from whatever you can find in your pantry!
Ingredients:
-Ground turkey or hamburger (We usually have ground turkey because it is healthier, but whatever you have around your house is good.)
-Every can of beans you can find in your pantry (best to use the ones without additional sauces)
-Italian seasoning
-Tostitos Scoops or corn chips (Scoops are the best, so if you have time to run by the store, do that!)
-Optional: Tomato sauce and diced tomatos
-Optional: 1 onion
1. Brown the meat
Brown a package of meat. Making chili isn't an exact science, so feel free to cook as much meat as you want (or whatever is about to go bad). If you want, you can cut up an onion for more flavor and cook it with the meat. When you are done cooking the meat and onion, set it aside for later.
2. Dump in the beans
Drain the extra liquid out of the cans of beans and dump the beans into a crock pot. The more types of beans you have in your chili, the better. It is more fun to have variety and it tastes better too.
3. Dump in the meat
Dump in your cooked meat on top of the beans. I usually do it in this order because it helps make sure that everything is mixed in properly.
4. Optional: Add in diced tomatoes and tomato sauce
A lot of people do this, including my mother, but I don't think it tastes as good. The beans with the Italian seasoning typically creates its own liquid when cooked, so I don't think it is necessary to add tomatoes. Feel free to do it if you want to! It doesn't ruin the chili, I promise.
5. Stir
Stir up the ingredients until it is well mixed and turn on the crockpot.
6. Add Italian seasoning
I love Italian seasoning. It is my go-to seasoning for my recipes. It makes everything taste better. Put in as much seasoning as you see fit and mix it in well.
7. Let it cook
It takes a while for something to cook in a crockpot. Chili typically takes about an hour. It is nice because you can get other things done and you don't have to worry about your food burning. It is a good idea to stir it every once and a while though, but you don't have to.
8. Serve
Serve it with Scoops and you are ready to go! Your friends and family will love it!
